How to Prepare Fijian-Style BBQ
Experience the flavours of Fiji with a mouth-watering Fiji-style BBQ. This guide will take you through the process, from marinating the meat to grilling it to perfection. Get ready to tantalize your taste buds with the delicious tastes of the Pacific. Let’s dive in.
Ingredients:
– 2 pounds of your preferred meat (such as chicken, beef, or lamb)
– 1 cup soy sauce
– ½ cup freshly squeezed lemon juice
– ¼ cup brown sugar
– 2 cloves of garlic, minced
– 1 tablespoon grated ginger
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– Salt and pepper to taste
Marinating the Meat:
1. In a large bowl, combine the soy sauce, lemon juice, brown sugar, minced garlic, grated ginger, ground cumin, ground coriander, salt, and pepper. Mix well to ensure all the flavours are combined.
2. Place the meat in the marinade, making sure it is fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight. This allows the meat to absorb the flavours and become tender.
Preparing the Grill:
1. Preheat your grill (or as in Fiji – we use BBQ Tray or more conveniently frying pan) to medium-high heat. If using charcoal, ensure the coals are evenly lit and have turned grey before placing the meat on the grill.
2. If desired, brush the grill grates with a bit of oil to prevent sticking.
Grilling the Meat:
1. Remove the marinated meat from the refrigerator and let it sit at room temperature for about 15 minutes.
2. Place the meat on the preheated grill, directly over the heat source.
3. Cook the meat for approximately 4-6 minutes per side, depending on the thickness and desired level of doneness.
4. While grilling, baste the meat with the remaining marinade to keep it moist and enhance the flavours.
5. Use a meat thermometer to ensure the meat reaches the desired internal temperature: 145°F (63°C) for medium-rare, 160°F (71°C) for medium, or 165°F (74°C) for well-done.
