– 1 small pumpkin, peeled, seeded, and cut into bite-sized pieces

– 1 onion, finely chopped

– 3 cloves of garlic, minced

– 1-inch piece of ginger, grated

– 2 tablespoons of curry powder

– 1 tablespoon of vegetable oil

– Salt and pepper to taste

– Optional toppings: fresh cilantro

1. Heat the vegetable oil in a large pan or pot over medium heat.

2. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

4. Add the curry powder to the pan and stir, allowing the spices to toast and release their flavors.

5. Add the pumpkin pieces to the pan and stir to coat them with the curry mixture.

6. Pour in a little bit of water ensuring that the pumpkin is submerged in the liquid.

7. Season with salt and pepper to taste.

8. Bring the mixture to a boil, then reduce the heat to low and cover the pan.

9. Allow the curry to simmer for about 20-25 minutes, or until the pumpkin is tender and easily pierced with a fork.

10. Stir occasionally during the cooking process to prevent sticking and ensure even cooking.

11. Once the pumpkin is cooked to your desired tenderness, remove the pan from the heat.

12. Serve the pumpkin curry hot over steamed rice or with warm roti or puri.

13. Garnish with fresh cilantro and squeeze a wedge of lime over the curry for an extra burst of flavor, if desired.

Enjoy your pumpkin curry! It’s a flavourful and satisfying dish that highlights the natural sweetness of the pumpkin.
