– 1 small pumpkin, peeled, seeded, and cut into bite-sized pieces

– 1 onion, finely chopped

– 3 cloves of garlic, minced

– 1-inch piece of ginger, grated

– 2 tablespoons of curry powder

– 1 tablespoon of vegetable oil

– Salt and pepper to taste

– Optional toppings: fresh cilantro

Instructions:

1. Heat the vegetable oil in a large pan or pot over medium heat.

2. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

4. Add the curry powder to the pan and stir, allowing the spices to toast and release their flavors.

5. Add the pumpkin pieces to the pan and stir to coat them with the curry mixture.

6. Pour in a little bit of water ensuring that the pumpkin is submerged in the liquid.
