Fiji style duck curry is a flavourful and aromatic dish that combines Indian and Fijian culinary influences. This rich and spicy curry features tender duck pieces cooked in a fragrant blend of spices.

Ingredients:

– 1 whole duck, cut into pieces

– 2 onions, finely chopped

– 4 cloves of garlic, minced

– 1-inch piece of ginger, grated

– 2 tomatoes, chopped

– 2 tablespoons curry powder

– 1 teaspoon turmeric powder

– 1 teaspoon cumin powder

– 1 teaspoon coriander powder

– 1 teaspoon chili powder (adjust according to your spice preference)

– 3 cup water

– Salt to taste

– Fresh cilantro leaves for garnish

– Cooking oil/Mustard Oil 

Step-by-Step Instructions:

1. Heat oil in a large pot or deep pan over medium heat. Add the chopped onions and sauté until they turn golden brown.

2. Add the minced garlic and grated ginger to the pot. Sauté for a minute until the raw aroma disappears.

3. Add the chopped tomatoes and cook until they soften and release their juices.

4. Add in all your spices curry powder, turmeric powder, cumin powder, coriander powder, and chili powder. Add this spice mixture to the pot and stir well to coat the onions, garlic, and tomatoes.

5. Add the duck pieces to the pot and season with salt. Stir to combine the duck with the spices and cook for a few minutes until the duck starts to brown.

6. Pour in the water, ensuring that the duck pieces are fully submerged. Give it a good stir and bring the mixture to a boil.

7. Once the curry comes to a boil, reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the duck is tender and the flavors have melded together. Stir occasionally and add more water if needed.

8. Once the duck is cooked, taste the curry and adjust the seasoning if necessary.

9. Garnish with fresh cilantro leaves before serving.

10. Serve the Fiji style duck curry with steamed rice or roti for a delicious meal.
